Stretching a chicken

I have the butcher cut my chickens up into eighths, and use the bones for the soup. THEN I de-bone the chicken from the soup, and freeze the pieces. When I have enough (2-3 carcasses worth, for a family of 8) I defrost, and use for a mid-week dinner - chicken pot pie, stir-fry, chicken salad, chicken casserole, or lo mein. It really stretches the number of meals I can get from a case of chickens, and my family loves these special dinners.

** EXTRA TIP: I also freeze those bits and pieces of leftover chicken each Sunday night, and add them to the mix.
